An amalgam of the beef curry soup we used to order from the Noodle Bar in Coventry, and kari mee/bun bo Hue I turn to for self-care.

Ingredients: beef stock (beef bones, onions, ginger, garlic), beef, noodles, potatoes, collard greens, onions, curry paste (onions, ginger, garlic, lemongrass, lime zest & juice, coconut cream), garlic, ginger, salt, turmeric, fenugreek, black pepper. Contains gluten.

Soup Reheating Instructions:

Reheat in microwave or on a stovetop, stirring first if you’re only serving part of the container--ingredients are layered in the containers.. If reheating on a stovetop, heat a couple of tablespoons of water to simmering, then add soup to prevent sticking. If soup is thicker than you’d like--grains and beans can continue to absorb water as soup cools--add a little more water or broth and adjust seasoning to taste.
